*Homemade Aloo Paratha* 🥔🥘
A classic Indian stuffed flatbread made with whole wheat flour and a spiced potato filling. Perfect for breakfast, lunch, or dinner, served with curd, pickle, or butter.

📝 *Ingredients* 
 *For the Dough:* 
➡️ 2 cups whole wheat flour (atta)
➡️ ½ tsp salt
➡️ Water as needed
➡️ 1 tsp oil or ghee

 *For the Stuffing:* 
➡️ 3 medium potatoes (boiled and mashed)
➡️ 1 green chili (finely chopped)
➡️ 1 tbsp fresh coriander leaves (finely chopped)
➡️ ½ tsp cumin seeds
➡️ ½ tsp red chili powder
➡️ ½ tsp garam masala
➡️ ½ tsp dry mango powder (amchur) or lemon juice
➡️ Salt to taste

 *For Cooking:* 
➡️ Ghee or oil for roasting

👩‍🍳 *Instructions* 
1️⃣ *Prepare the Dough* 
In a mixing bowl, combine wheat flour and salt.
Gradually add water and knead into a soft dough.
Add 1 tsp oil or ghee, knead again, cover, and rest for 20 minutes.

2️⃣ *Make the Potato Filling* 
Heat 1 tsp oil in a pan, add cumin seeds, and let them crackle.
Add boiled, mashed potatoes, green chili, coriander leaves, and spices.
Mix well and cook for 2-3 minutes.
Let the filling cool completely.

3️⃣ *Assemble the Paratha* 
Divide the dough and stuffing into equal portions.
Roll out a small disc of dough, place stuffing in the center, and seal the edges.
Gently roll out into a round paratha without breaking the stuffing.

4️⃣ *Cook the Paratha* 
Heat a tawa or skillet on medium flame.
Place the rolled paratha on it and cook until light brown spots appear.
Flip, apply ghee or oil, and cook both sides until golden and crisp.

5️⃣ *Serve Hot* 
Serve with butter, curd, pickle, or chutney for a perfect homemade meal.

💡 *Tips & Variations* 
Add finely chopped onions to the stuffing for extra flavor.

Use multigrain flour for a healthier version.

To make cheese aloo paratha, add grated cheese to the filling.
