🥟 *Veg Spring Rolls – Crispy & Delicious Snack* 
Veg Spring Rolls are crispy, golden rolls filled with flavorful mixed vegetables. A popular Indo-Chinese snack, they are perfect as an appetizer for parties, evening snacks, or served alongside fried rice or noodles.

📝 *Ingredients* 

 *For the Filling:* 
➡️ 1 cup Cabbage (thinly shredded)
➡️ ½ cup Carrot (julienned)
➡️ ½ cup Capsicum (thinly sliced)
➡️ ½ cup Spring Onions (chopped)
➡️ 1 tbsp Oil
➡️ 1 tbsp Soy Sauce
➡️ 1 tsp Vinegar
➡️ ½ tsp Black Pepper Powder
➡️ Salt to taste

 *For the Rolls:* 
➡️ 8–10 Spring Roll Sheets (store-bought or homemade)
➡️ 2 tbsp Maida (all-purpose flour) mixed with water for sealing
➡️ Oil for deep frying

👩‍🍳 *Instructions* 

 *Step 1 – Prepare the Filling* 
1️⃣ Heat 1 tbsp oil in a pan or wok.
2️⃣ Add spring onions and sauté for a minute.
3️⃣ Add cabbage, carrot, and capsicum. Stir-fry on high heat for 2–3 minutes.
4️⃣ Add soy sauce, vinegar, black pepper, and salt. Mix well.
5️⃣ Cook for another minute and set aside to cool.

 *Step 2 – Assemble the Spring Rolls* 
1️⃣ Take a spring roll sheet and place 2 tbsp of the filling near one edge.
2️⃣ Fold the sides inward and roll tightly.
3️⃣ Seal the edge using the maida-water paste.
4️⃣ Repeat with the remaining sheets.

 *Step 3 – Fry the Spring Rolls* 
1️⃣ Heat oil in a deep frying pan on medium flame.
2️⃣ Fry the rolls in batches until golden brown and crispy.
3️⃣ Drain on a paper towel to remove excess oil.

🍴 *Serving Suggestion* 
Serve hot with schezwan sauce, sweet chili sauce, or tomato ketchup for a restaurant-style snack experience.
