✅ *Khaman Dhokla Recipe* 🫓✨
A light, fluffy Gujarati snack made in just 20 minutes!
*📝 Ingredients:*
*For Batter:*
- 1 cup besan (gram flour)
- 1 tbsp semolina (rava/sooji) – optional
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp turmeric
- 1 tsp lemon juice or 1 tsp citric acid
- 3/4 cup water (adjust for consistency)
- 1 tsp Eno (fruit salt) – add just before steaming
*For Tempering:*
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 2 green chilies (slit)
- 5-6 curry leaves
- 2 tbsp water + 1 tsp sugar (optional)
*For Garnish:*
- Fresh coriander leaves
- Grated coconut (optional)
*👩🍳 Instructions:*
1️⃣ *Make the Batter:*
In a bowl, mix besan, rava, salt, sugar, turmeric, lemon juice, and water. Whisk well to form a smooth batter.
2️⃣ *Add Eno:*
Just before steaming, add Eno and mix quickly. Batter will rise and turn airy.
3️⃣ *Steam the Dhokla:*
Pour into greased steaming plate or thali. Steam for 15–18 minutes on medium flame. Check with toothpick—it should come out clean.
4️⃣ *Cool & Cut:*
Let it cool slightly. Cut into square pieces.
5️⃣ *Prepare Tempering:*
Heat oil. Add mustard seeds, sesame seeds, green chilies, and curry leaves. Add sugar + water. Pour over the dhokla.
6️⃣ *Garnish & Serve:*
Top with chopped coriander and coconut. Serve with green chutney!
💡 *Tips:*
- Don’t overmix after adding Eno.
- Use fresh Eno for best results.
- Steaming time may vary slightly based on vessel thickness.
