🥘 *Bitter Gourd Stir-Fry (Karela ki Sabji) – A Healthy Indian Side Dish*

🌿 *Ingredients* 

4 medium bitter gourds (karela)
2 tbsp oil
1 tsp cumin seeds
1 onion, finely chopped
1 tsp ginger-garlic paste
1 tomato, chopped (optional)
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
½ tsp dry mango powder (amchur) or lemon juice
Salt to taste

👩‍🍳 *Instructions* 
1. Wash the bitter gourds, lightly scrape the skin, and slice them into thin rings.

2. Sprinkle salt over the slices and let them rest for 15–20 minutes to reduce bitterness.

3. Rinse and squeeze out the excess water.

4. Heat oil in a pan and add cumin seeds; let them splutter.

5. Add onions and sauté until golden brown.

6. Add bitter gourd slices and cook on medium flame for about 10–12 minutes.

7. Add all the spices — turmeric, red chilli, coriander, and salt. Mix well.

8. Continue cooking until the bitter gourd becomes slightly crispy.

9. Finally, add dry mango powder or lemon juice and mix well before serving.

🍋 *Tips* 
Add boiled potatoes or roasted peanuts for a crunchier variation.

A small pinch of jaggery can balance out the bitterness beautifully.
