🥟 *Rajasthani Mogar Kachori – Crispy & Spicy Delight* 
✨ A traditional Rajasthani snack made with spiced moong dal (mogar) filling, deep-fried till golden and crispy. Best enjoyed with chutneys or hot tea.

📝 *Ingredients* 

 *For Dough:* 
👉 2 cups All-Purpose Flour (Maida)
👉 4 tbsp Ghee (melted)
👉 ½ tsp Salt
👉 Water (as needed for kneading)

 *For Filling:* 
👉 1 cup Yellow Moong Dal (Mogar) – soaked 2 hours
👉 2 tbsp Oil
👉 1 tsp Cumin Seeds
👉 1 tsp Fennel Seeds (saunf)
👉 1 tsp Coriander Powder
👉 ½ tsp Asafoetida (hing)
👉 1-2 Green Chilies – finely chopped
👉 1 tsp Ginger Paste
👉 1 tsp Red Chili Powder
👉 ½ tsp Turmeric Powder
👉 1 tsp Garam Masala
👉 1 tsp Amchur Powder (dry mango powder)
👉 Salt – as per taste

 *For Frying:* 

👉 Oil – for deep frying

👩‍🍳 *Instructions* 

 *Step 1: Prepare Dough* 
In a bowl, mix flour, salt, and ghee. Rub with fingers till crumbly.

Add water gradually and knead into a soft dough. Cover and rest for 20 minutes.


 *Step 2: Prepare Filling* 
Drain soaked moong dal and coarsely grind it (not too fine).

Heat oil in a pan, add cumin seeds, fennel seeds, and hing.

Add green chilies, ginger, and ground dal. Sauté for 5–6 minutes.

Mix in turmeric, coriander powder, chili powder, garam masala, amchur, and salt. Cook till dry. Let it cool.

 *Step 3: Shape Kachoris* 
Divide dough into lemon-sized balls.

Roll slightly, place 1 tbsp filling in center, seal edges, and flatten gently.

 *Step 4: Fry Kachoris* 
Heat oil on medium-low flame. Fry kachoris slowly till golden and crispy.

 *Step 5: Serve Hot* 
Enjoy with tamarind chutney, green chutney, or kadhi.

🌿 *Serving Suggestion* 
Mogar Kachori tastes best with imli chutney or with a full Rajasthani thali as a side snack.
