🥣 *Oats Vegetable Upma | Healthy Morning Breakfast* 
Oats Vegetable Upma is a nutritious twist on traditional upma. High in fiber and quick to make, it’s perfect for busy mornings and a healthy lifestyle.

⏱️ *Time Required* 
Prep Time: 5 minutes
Cook Time: 10 minutes
Serves: 2

📝 *Ingredients* 
➡️ 1 cup rolled oats
➡️ 2 tbsp oil or ghee
➡️ ½ tsp mustard seeds
➡️ ½ tsp cumin seeds
➡️ 8–10 curry leaves
➡️ 1 green chilli (chopped)
➡️ 1 small onion (finely chopped)
➡️ ¼ cup carrot (chopped)
➡️ ¼ cup beans / capsicum (optional)
➡️ ½ tsp turmeric powder
➡️ Salt to taste
➡️ 2 cups water
➡️ Fresh coriander leaves
➡️ Lemon juice (optional)

👩‍🍳 *Method* 
 *Step 1:* Dry roast oats on low flame for 2–3 minutes until aromatic. Keep aside.

 *Step 2:* Heat oil or ghee in a pan. Add mustard seeds and cumin seeds; let them crackle.

 *Step 3:* Add curry leaves, green chilli, and chopped onions. Sauté until onions turn translucent.

 *Step 4:* Add chopped vegetables and cook for 2–3 minutes.

 *Step 5:* Add turmeric powder and salt. Mix well.

 *Step 6:* Pour in water and bring it to a boil.

 *Step 7:* Add roasted oats, mix continuously, and cook till water is absorbed.

 *Step 8:* Switch off the flame, garnish with coriander, and add lemon juice if desired.

🍽️ *Serving Suggestion* 
Serve hot with coconut chutney or plain curd.
