Gajar ka Halwa is a traditional North Indian dessert made with fresh carrots, milk, ghee, and sugar. Rich, aromatic, and comforting—this halwa is a winter favourite across Indian households.
🧾 *Ingredients*
*Main Ingredients*
🔵 4 cups grated red carrots
🔵 2 cups full-fat milk
🔵 3–4 tbsp ghee
🔵 ½ cup sugar (adjust to taste)
🔵 ½ tsp cardamom powder
*Dry Fruits*
🔵 8–10 cashews
🔵 8–10 almonds (sliced)
🔵 1 tbsp raisins
🍳 *Instructions*
*Step 1: Cook the Carrots*
➡️Heat 1 tbsp ghee in a pan.
➡️Add grated carrots.
➡️Sauté for 4–5 minutes until raw smell fades.
*Step 2: Add Milk*
➡️Pour in milk.
➡️Stir well and cook on medium flame.
➡️Stir occasionally to prevent sticking.
➡️Cook until the milk evaporates completely.
*Step 3: Add Sugar & Ghee*
➡️Add sugar and mix.
➡️Cook until the halwa thickens again.
➡️Add 2–3 tbsp ghee and cook for 3–4 minutes.
*Step 4: Add Dry Fruits*
➡️Heat 1 tsp ghee and lightly fry the cashews, almonds & raisins.
➡️Add them to the halwa.
➡️Sprinkle cardamom powder.
➡️Cook for 1–2 minutes and switch off the flame.
🍽️ *Serving Suggestion*
Serve warm.
Refrigerate leftovers and reheat before serving.
