🌞🥞 *Appa (Soft South Indian Breakfast)* 🥞🌞
Appa is a healthy, fermented South Indian breakfast made from rice and coconut. Light, fluffy, and mildly sweet, it pairs beautifully with coconut chutney or vegetable stew.
🛒 *Ingredients*
➡️ Raw rice – 1 cup
➡️ Cooked rice – ½ cup
➡️ Fresh grated coconut – ½ cup
➡️ Sugar – 1 tsp
➡️ Yeast – ½ tsp (optional)
➡️ Salt – to taste
➡️ Water – as required
➡️ Oil – for greasing
👩🍳 *Method*
1️⃣ Soak raw rice for 4–5 hours.
2️⃣ Grind soaked rice, cooked rice, coconut, sugar, and yeast with water into a smooth batter.
3️⃣ Transfer batter to a bowl, add salt, and mix well.
4️⃣ Cover and ferment overnight or 8–10 hours till batter becomes light and airy.
5️⃣ Heat an appa pan, grease lightly, pour a ladle of batter, and swirl gently.
6️⃣ Cover and cook on low flame till edges turn crisp and center is soft.
7️⃣ Remove and repeat for remaining batter.
