Idly is a light, fluffy, and healthy South Indian breakfast made from a fermented batter of rice and urad dal. Perfect with coconut chutney and sambar, it’s a wholesome start to your day!

🛒 *Ingredients (Makes ~20 Idlies)* 
👉 2 cups Idly rice (or parboiled rice)
👉 1 cup Urad dal (split black gram, skinless)
👉 1 tsp Fenugreek seeds (optional, for extra softness)
👉 Salt to taste
👉 Water as needed
👉 Oil for greasing idly plates

🥣 *Instructions* 
🍚 *Step 1 – Soak the Ingredients* 
➡️ Wash and soak rice in water for 4–6 hours.
➡️ Wash and soak urad dal and fenugreek seeds separately for 4–6 hours.

🌀 *Step 2 – Grind the Batter* 
➡️ Grind urad dal + fenugreek into a smooth & fluffy paste, adding water as required.
➡️ Grind rice into a slightly coarse paste.
➡️ Mix both pastes in a large bowl.

⏳ *Step 3 – Ferment the Batter* 
➡️ Add salt and mix well.
➡️ Cover and keep in a warm place for 8–12 hours until the batter doubles in volume.

🔥 *Step 4 – Steam the Idlies* 
➡️ Grease idly plates with a little oil.
➡️ Pour batter into each mold.
➡️ Steam for 10–12 minutes in an idly steamer or pressure cooker (without whistle).

➡️ Remove idlies gently using a spoon.
