🥘 *Vegetable Pulao*
✨ Veg Pulao is a delicious, aromatic rice recipe cooked with mixed vegetables, spices, and herbs. It’s light yet filling and makes for a perfect lunch or dinner option.
📝 *Ingredients*
👉 1 cup Basmati Rice (soaked for 20 mins)
👉 2 cups Water
👉 1 Onion (thinly sliced)
👉 1 Tomato (chopped)
👉 1 cup Mixed Vegetables (carrot, beans, peas, cauliflower, etc.)
👉 2 Green Chilies (slit)
👉 1 tsp Ginger-Garlic Paste
👉 2 tbsp Oil or Ghee
*Whole Spices:*
👉 1 Bay Leaf
👉 1 inch Cinnamon Stick
👉 3-4 Cloves
👉 2-3 Green Cardamoms
👉 1 tsp Cumin Seeds
*Powdered Spices:*
👉 ½ tsp Turmeric Powder
👉 1 tsp Coriander Powder
👉 ½ tsp Garam Masala
👉 Salt – as per taste
👩🍳 *Method*
1. Heat oil/ghee in a pan. Add bay leaf, cinnamon, cloves, cardamom, and cumin seeds. Sauté until aromatic.
2. Add sliced onions and fry until golden brown.
3. Mix in ginger-garlic paste and sauté for a minute.
4. Add chopped tomatoes, green chilies, and dry spices. Cook until tomatoes turn soft.
5. Add mixed vegetables and stir fry for 2-3 minutes.
6. Add soaked rice and mix gently. Pour in 2 cups water, add salt, and bring to a boil.
7. Cover with a lid, simmer on low flame for 15 minutes, or until rice is cooked and fluffy.
8. Garnish with fresh coriander and serve hot.
