🍮 *Rice Kheer – Traditional Indian Sweet Pudding*

🍴 Serves: 4
🛒 *Ingredients:*
→ 1 litre full cream milk
→ ¼ cup basmati rice (washed and soaked for 30 mins)
→ ¼ cup sugar (adjust as per taste)
→ 4–5 green cardamoms (crushed)
→ 8–10 cashews (chopped)
→ 8–10 almonds (sliced)
→ 1 tbsp raisins
→ A few saffron strands soaked in 1 tbsp warm milk
→ 1 tbsp ghee (optional)
👩🍳 *Instructions:*
1. Heat milk in a thick-bottomed pan and bring it to a boil.
2. Add soaked rice and stir well. Cook on low flame, stirring occasionally, so it doesn’t stick.
3. When rice turns soft and the milk thickens (after about 25–30 minutes), add sugar and mix well.
4. Add saffron milk, cardamom, and dry fruits (reserve some for garnish).
5. Cook for another 5 minutes until creamy and fragrant.
6. Turn off the flame and let it cool slightly. Serve warm or chilled.
💡 *Tip:*
Add a few drops of rose water or kewra essence at the end for a rich aroma.
