Evening hunger is real — and these Veg Cheese Balls are the perfect solution. Crispy outside, cheesy inside, and easy to prepare. Whether you're planning a party or just craving something tasty with tea, this recipe is a winner!

🍴 *Ingredients:* 
 *For the Filling:* 
1 cup boiled & mashed potatoes
½ cup grated processed cheese or mozzarella
¼ cup finely chopped carrots
¼ cup finely chopped capsicum
¼ cup boiled sweet corn
1 tsp ginger-garlic paste
½ tsp black pepper
½ tsp chili flakes
½ tsp mixed herbs (optional)
Salt to taste

 *For Binding & Coating:* 
2 tbsp cornflour
2 tbsp all-purpose flour (maida)
Water as needed
Bread crumbs for coating
Oil for deep frying

👩‍🍳 *Instructions:* 
 *1. Prepare the Filling:* In a large bowl, mix mashed potatoes, all the veggies, cheese, and spices. Combine well to form a soft mixture.
 *2. Shape into Balls:* Roll small portions into smooth, round balls. Place in the refrigerator for 10–15 minutes to set.
 *3.* *Make Slurry:* In a bowl, mix maida, cornflour, and water to form a smooth paste.
 *4.* *Coat the Balls:* Dip each ball into the slurry and roll in breadcrumbs. For extra crunch, repeat the coating process.
 *5.* *Deep Fry:* Heat oil and deep fry the balls on medium flame until golden brown. Remove and drain on paper towels.
 *6.* *Serve Hot:* Serve with ketchup, mint chutney, or mayo dip along with a hot cup of tea!

✅ *Tips:* 
For a healthier option, bake or air fry the balls at 180°C for 15–18 minutes.
Add green chilies or extra chili flakes for a spicy version.
