🌿 *Palak Curry – A Healthy Green Delight!* 🥬🍛💚

📝 *Ingredients:* 
2 cups fresh spinach (palak), washed and chopped 🌿
1 tbsp oil or ghee
1 medium onion, finely chopped 🧅
1 tomato, chopped 🍅
1 tsp ginger-garlic paste
1 green chili, slit (optional) 🌶️
½ tsp cumin seeds
½ tsp turmeric powder
1 tsp coriander powder
½ tsp garam masala
Salt to taste
2 tbsp fresh cream or 1 tbsp curd (optional for creaminess)

👩‍🍳 *Instructions:* 
 *1. Blanch the spinach:* 
Boil water in a pan, add spinach leaves, and cook for 2–3 minutes. Transfer immediately to cold water, then blend into a smooth puree.

 *2. Prepare the masala:* 
Heat oil in a pan, add cumin seeds. Once they splutter, add onions and sauté until golden brown. Add ginger-garlic paste and sauté for a minute.

 *3. Add tomatoes & spices:* 
Add chopped tomatoes, turmeric, coriander powder, and salt. Cook until the tomatoes soften and the oil separates.

 *4. Mix in the spinach:* 
Add the spinach puree and mix well. Cook for 5–7 minutes on medium flame.

 *5. Finish with flavor:* 
Stir in garam masala and fresh cream or curd. Simmer for 2 more minutes.

 *6. Serve hot!*
