🛒 *Ingredients*
*For the Spinach Purée:*
➤ 2 bunches of fresh spinach (palak)
➤ 2 green chilies
➤ Water for blanching
➤ Ice water (to retain bright green color)
*For the Curry:*
➤ 200–250g paneer (cut into cubes)
➤ 2 tbsp oil or ghee
➤ 1 tbsp butter (optional)
➤ 1 bay leaf
➤ 1 tsp cumin seeds
➤ 1 medium onion (finely chopped)
➤ 1 tsp ginger-garlic paste
➤ 1 medium tomato (finely chopped or puréed)
➤ ½ tsp turmeric powder
➤ ½ tsp red chili powder
➤ ½ tsp garam masala
➤ Salt to taste
➤ 2 tbsp fresh cream (optional, for richness)
🍳 *Instructions*
*1. Blanch the Spinach:*
Boil water in a pot. Add spinach leaves and green chilies. Cook for 2–3 minutes, then immediately transfer to ice-cold water. Drain and blend into a smooth purée.
*2. Prepare the Masala Base:*
Heat oil/ghee in a pan. Add cumin seeds and bay leaf. Once they sizzle, add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for a minute.
*3. Add Tomatoes & Spices:*
Add chopped/puréed tomatoes, turmeric, chili powder, and salt. Cook until the oil separates and the masala is well-blended.
*4. Add Spinach Purée:*
Mix in the spinach purée and cook for 4–5 minutes on medium heat. Add garam masala and stir well.
*5. Add Paneer:*
Add paneer cubes and simmer gently for 2–3 minutes. Finish with a dollop of butter and cream for that restaurant-style richness.
